Confession... I'm having a love affair!! This pesto is beyond good and I just can't get enough!! It's a combination of two thermomix recipes.
50g parmesan cheese
1 garlic clove
160g raw cashews
Basil leaves off 4 sprigs
20g fresh spinach leaves
120g olive oil
1. Place parmesan and garlic in bowl and grate 10secs/speed 9. Scrape down sides.
2. Add nuts, basil and spinach and chop 10 secs/speed 6. Scrap down sides.
3. With blades rotating on speed 4, slowly add oil through hole in lid until well combined.
4. Use straight away, freeze or place in jar, cover with a layer of olive oil, and refrigerate until reading to use.
(I served it with homemade nachos and it was awesome! Can be used as a dip, with pasta, in quesadilas or however else you'd like!)
